RECIPE: Hummingbird Cakes

Teeny Tiny Hummingbird Cakes

If you came into AARI last week you would have had a taste of these. Our psychologist John Barter supplied me with a bunch of home-grown bananas and Cheryl delivered some beautiful passion fruit. So, it was an AARI Team effort!

INGREDIENTS
2/3 C plain flour
1/3 cup SR flour
1/2 tsp bicarb
1/2tsp cinnamon
1/4 cup brown sugar
1/3 cup desiccated coconut
2 eggs lightly beaten
1/2 cup olive oil
1/2 cup pineapple and one large bananas coarsely whizzed with the stick whiz

METHOD
Step 1. Preheat oven to 180degrees and prepare a mini muffin tray with patty cases.
Step 2. combine all dry ingredients in a large bowl.
Step 3. combine eggs, oil, vanilla and banana and pineapple mix together in a separate bowl. Then add the wet ingredients to the dry ones and mix until combined.
Step 4. spoon into patty cases (makes approximately 24) and bake for around 9minutes.
Step 5. OPTIONAL: ice with the pulp of one passion fruit and around 1/2 cup of icing sugar. It will seep into the cakes, so don’t overload them!
